Leek and Blue Cheese Bruschetta Toasts
I’ve been wanting to learn how to make more new savoury vegetarian foods, and I’ve started with a challenge to myself to make two new recipes each week. So far it’s been working out really well, and it has been a great reason to get home from the studio on time – which is a skill that I’m usually lacking in. Last week I found an amazing looking recipe for Leek and Blue Cheese Toasts that looked like a piece of caramelized heaven. I love the strong flavour of blue cheese, and I tried my first leek this winter (I know, I know!) so I thought it would be a good start to make up for lost time.
The results were amazing! The leeks soften and develop a rich, creamy taste (cooking with butter, be still my heart!) while the blue cheese keeps it interesting, tangy and balanced. It was simple, gourmet and I can’t wait to try it again on real baguette. It’s a delicious appetizer that I totally recommend you add to your arsenal- even if that means using your stove in the summer. You can always enjoy your toasts outside while your place cools down ;)

Roll out the pastry into very thin circles (about 10cm in diameter). Fill with fresh fig and crumbled stilton. Drizzle with honey. Shape the pastry circle into a parcel around the filling and put in the oven for about 10-15 mins. Mmmm.
Omg. That looks so good. I have some leftover goat cheese in my fridge so I think I’ll use that.

oh i love leek. i use it all the time. just last night in a leek & zucchini caserolle with rice. so yum. and smitten kitchen … hmmmmm. try their wonderful mac & cheese. it’s to die for!

oh my they look yum! i go through stages of trying lots of new recipes and then get in a rut and do hardly any cooking. at the moment i’m in a rut ~ must get out of it! Although last friday we made lots of lovely salads (i’m a veggie too) and they were so colourful and beautiful and tasty. i blogged about it too :-)

I ate my first leeks this winter, also! I think they’re so savory and flavorful, I started adding them to just about everything. This looks awesome – and I’ve found some of the best recipes on Smitten Kitchen!

The menu in August will be mostly vegan! It’s been fun to research recipes. I’ll probably grill some meat for the meat eaters, but most of the menu will be vegan/vegetarian!
I am totally going to make this! I’m in Paris, and always searching for new things to put on leftover baguette!
