Serious Hummus
I’m a big flavour person- I love strong ones and subtle ones, balanced ones and loud ones. When we came home from the road trip (and lots of heavy meals) I knew I wanted to make more snacks and appetizers partnered with lighter meals, so having something flavourful and healthy around the house currently ranks up there on my list of Household Decrees.
Also on said list:
– Pinot > Merlot
– Goat cheese goes with almost anything
– No puppies on the table.
– NO PUPPIES ON THE TABLE.
I made hummus for the first time last night, and it’s brilliant! It means business about the garlic, but it’s really delicious and I had to share…
Serious Hummus
Modified from Holy-Moly Hummus in How It All Vegan
1 small onion, chopped
6 cloves of garlic, minced
Splash of olive oil
2 1/2 C canned chickpeas
1/2 C tahini
1 1/2 Tsbp soy sauce
3/4 C lemon juice
1 tsp cumin
1/4 tsp cayenne pepper
1 tsp salt
1. Saute the onions and garlic in a splash of olive oil over medium heat until the onions are cooked through and translucent.
2. Combine remaining ingredients in a food processor until you reach your preferred consistency. If you’re using a blender (like me) make sure to pulse it together, as this mixture is very thick. It may help if you mix the ingredients together as much as possible, and then blend them in two batches

I have a friend who made me her hummus once, and it was seriously the best I’ve ever had. Hold please while I email said friend for said recipe and compare.

Mmm, I love hummus. It’s such a great snack w/ carrots or other veggies. My gluten free heart aches a bit for pita bread, though. :(
I simply can not stand goat cheese to safe my life! I don’t know what it is about the taste but I just can’t stand it…

I am so in love with hummus. I always keep several cans of chickpeas in my cupboard. Tahini stores well in the refrigerator, too. I love to use roasted garlic in mine. It is so easy to roast garlic, and the flavor is milder with more depth, imho.
In a batch of this size, I would use three whole heads of garlic roasted with olive oil and a little salt and pepper. YUM!
WOAH that would be amazing! We always roast garlic when we have guests over & just pop them onto crostini, this would be another perfect application!

I’m gonna say it … I hate hummus. I’ve tried it multiple places and at various parties, and I can’t do it. =/ I feel like all the “cool” people like hummus and I’m on the outside.
Oh Mindy! lol If the dividing line between cool people and the rest of the world was hummus, we would live in a very strange world!
How about I enjoy mine for you, and you enjoy something with some meat in it for me? Like a caesar salad! I can’t have the dressing and it drives me up the wall that I miss out. We can split the difference and call it even :)

Yay hummus! I’ve never tried it with sauted onions, so I’ll probably give your recipe a whirl next time I make hummus. I sometimes add in shredded carrot.
Also, if it’s too dry I’ll also use some of the liquid from the can of chickpeas (to keep it from being too lemony).

I’ve been wanting to try hummus for the longest time! I’m going to have to give this recipe a try.
Also, Husband and I went to a vegetarian restaurant while we were in Asheville (it’s called Laughing Seed Cafe), and I tried tofu for the first time. It was a burrito with tico tofu, avocados, sour cream, feta cheese, and salsa … and it was probably the best thing I’ve EVER had. I’ve always been afraid to try tofu, but I think I might love it now. We even went back the next day and I had whole grain risotto with grilled tempeh. So good!
Anyway, I always think of you and Ev’Yan when I think of vegetarian. Husband and I would like to have “vegetarian days” throughout the week, so I may come to you for inspiration. Be prepared! ;)
P.S. I’ve tried to like goat cheese. Definitely not my kind of cheese, sadly. At most of the restaurants in Asheville, they had cheesy grits (do you have grits in Canada? I know a lot of places up north don’t–it’s more of a southern thing, I suppose), and Husband ordered goat cheese grits. I tried them, but couldn’t get passed the goat cheese. He loved them, though!
I’ve tried making hummus twice before, but the recipes I was given just seemed off somehow. I’m going to save this one and try it out after a trip to the grocery store!
I’ve never tried to make hummus, but should. I did make strawberry sangria over the weekend and it was completely delightful.
Also, yes. Goat cheese makes anything better. I put some on a bagel last week and it was amazing!

Hummus, oh how I miss hummus!
I have a friend who makes her own hummus, but it always turns out really dry and kind of tasteless. The ingredients going into yours … well, looks really good … might have to try it on my own!
Mine was looking quite dry too, and my blender definitely wasn’t feeling it! I altered the recipe to use a little less tahini & more lemon juice to even things out. But I think that “Just Add More Garlic” isn’t a bad tactic for any lackluster meal :)
I’m obsessed with hummus – anywhere we go that serves it, I have to get it :)! But I tried making it once…and it was awful so I never tried again (I know, silly, right?) I’m going to give your recipe a try!!

I love hummus and pita chips! I’ve never tried to make it myself though. Looking at this recipe though, I’m thinking that maybe I should. I have no idea where to get tahini though. Will have to investigate that. Thanks for sharing!

Don’t be embarrassed! It’s one of those things that’s really specific ethnic food, and I know that Australia just doesn’t get a lot of these things.
It’s a Mediterranean, garlicy + lemony dip! Tahini is sesame seed paste, it takes kind and looks like a really mild flavoured organic peanut butter. That gives is a really hearty, nutritious and creamy base for the main taste: a garlic & lemon dream :)
I love homemade hummus- I personally think my mom’s is the best! My favorite part about her recipe- it doesn’t have tahini in it. Somehow, it brings out the flavors so much more!
